The Sweet Melissa test kitchen has been on quite the adventure for the last few months. A family member has gotten a diagnosis which has dramatically changed our eating habits. I have been concentrating on savory foods and learning about unfamiliar ingredients, mainly, but turned out an oatmeal bar a couple of weeks ago which did not cause any increase in blood sugar....and used NO artificial sweeteners! I was actually shooting for a cookie 😜😜😜

I have adjusted my original recipe and will have a better idea how cookie-like I can make it. I hope to eventually have a low glycemic product to offer with a low GI. ❤

P. S. based on the cost of these ingredients, the new cookies will be about a million dollars each 😂

Ugh! This icing recipe was the WORST! It tastes good but spread awful...and the rosettes are melting 😒

But my darling 6-year-old niece shall have her unicorn cake, and it will taste amazing 💝 Happy Birthday to Emma Grace 🎉🦄

It's a beautiful Sunday to hold church on our couch and enjoy each other. I bought grape juice and small crackers this week so we can have communion as well. He is Risen. ⛪
