Almond Croissant Cookie Bars ๐ฐ๐ช
Ingredients:
For the Dough:
- 1 cup unsalted butter, softened ๐ง
- 1/2 cup granulated sugar ๐
- 1 large egg ๐ฅ
- 1 tsp vanilla extract ๐ฆ
- 2 cups all-purpose flour ๐พ
- 1/4 tsp salt ๐ง
For the Almond Filling:
- 1/2 cup almond paste ๐ฐ
- 1/4 cup powdered sugar ๐
- 2 tbsp unsalted butter, softened ๐ง
- 1/2 tsp almond extract ๐ฐ
For Topping:
- 1/2 cup sliced almonds ๐ฐ
- Powdered sugar, for dusting ๐
Directions:
1. **Prepare the Dough:** In a bowl, cream butter and sugar until light and fluffy. Mix in egg and vanilla. Gradually add flour and salt, mixing until just combined. Press dough into a lined 9x9-inch baking pan. Chill for 30 minutes.
2. **Make the Almond Filling:** In a separate bowl, mix almond paste, powdered sugar, butter, and almond extract until smooth.
3. **Assemble:** Spread the almond filling over the chilled dough. Sprinkle sliced almonds evenly on top.
4. **Bake:** Preheat oven to 350ยฐF (175ยฐC). Bake for 25-30 minutes or until golden brown. Let cool completely.
5. **Serve:** Dust with powdered sugar, slice into bars, and enjoy this flaky, nutty treat!
