1st bake after reviving my starter that was in the fridge for 2 months. 🙈

100% bread flour
75% hydration
2% kosher sea salt
20% levain
6 hour bulk fermentation
1 stretch and fold
3 coil folds 40 min apart
20 min bench rest after shaping
22 hour cold re**rd
Baked at 480F for 25 min covered & 450F for 18 min uncovered

I was a terrible starter mom and neglected Hoochie Mama for almost a week. It took me 2 weeks to bring her back to life but she’s thriving now! starter jars are my favorite.
