Sun and moon cake, but make it green and black

Fun fact: I didn’t use any artificial dye in the frosting. I made the black frosting with black cocoa powder (tastes like Oreos!) and the green with Watkins brand dye-free coloring

This was made for someone who has a list of food allergies, and the person who ordered it for her also has food allergies, and neither of them have been able to eat cake for a very long time!

I made this cake without: gluten, dairy, eggs, soy, potato, corn, avocado, coconut, or nuts. (I know some of those don’t sound like they’d be in cake anyway but when you’re avoiding gluten and dairy they can be in those substitutes!)

It was definitely a small challenge to get the ingredients right but so worth it to spread the joy of cake! I am so glad to have been able to make something they could enjoy 😊 🍰

Here it is! My “healthier”, gluten free, vegan, soft-baked cookies! They are made with date sugar and coconut sugar so they have a low glycemic index, plus they have fiber, protein, and potassium! I feel like the pictures don’t do them justice but they are large cookies, and they are so soft and moist even after sitting on the counter for a few days!! I already want to make more 👀

Did you know?
Date sugar is just as sweet as white sugar (almost sweeter in my opinion), tastes like caramel, has a lower glycemic index than white sugar, and contains fiber and nutrients. It’s all natural, paleo, and vegan too! I’m working on a recipe for gluten free, vegan cookies using date sugar and coconut sugar (similar benefits with a slight bitterness like brown sugar)
