🥖 24-hour fermentation - Time is flavor. We use a slow, 24-hour proof that blends gentle room-temperature fermentation with cold proofing. This allows enzymes to break down starches gradually, developing complexity, improving digestibility, and enhancing that signature sourdough aroma and taste.
🥖 Flour & Hydration balance - High-quality flour and intentional hydration encourage longer fermentation and better enzyme activity. This balance brings out nutty notes, caramelized depth, and a naturally rich finish in every loaf.
