A refreshing and fun summer cookie you can eat for that upcoming pool party or any summer event! My limited edition Piña Colada cookies! Delicious! Made with pineapple juice, white chocolate chips, pure vanilla extract crafted with Madagascar bourbon vanilla beans, coconut, and topped with a sugary pineapple cream cheese icing, a pineapple candy bit, and kissed with some coconut and lime zest. I believe my large, 90 gram “Zesty” White Chocolate Chip Lemon Cookie is my fav now! It is made with freshly squeezed lemon juice and fresh lemon zest, topped off with powdered sugar. They will be for sale soon at $15 for a box of four.

All cookies are hand made without any machine mixers. I feel the dough much better in my fingers without over-mixing which makes the end result a rigid, non-flat, nice textured, chewy inside, and crispy edged cookie every time.
