Made these gluten free (GF) almond gingerbread (shaped) people! I am adding a link here for the recipe (I did add 2 tsp of almond extract & 2 tsp of vanilla to mine) and I did a quick drying icing instead of the cream cheese & I will link the Icing recipe in the comments below.
