We decided on the fly during training yesterday morning to add a raspberry tart on our permanent menu and are so excited to offer this absolutely iconic and gorgeous French pastry 😁 These were in every pâtisserie I have visited throughout France and are so elegant and beautiful. Pâte sucrée shell, crème pâtissière, fresh raspberries (which will be locally sourced soon!), dusted with confectioners sugar 💋

This pastry seems so simple, but it is so complex. All of our menu items have many, many working parts, steps, and SO much involvement prior to assembly. We have lots more to cover but are working so hard to be ready for our soft open at the end of the month!
