Wow has time gotten away from me! I haven't even posted about our house concert back on the 21st, which was AMAZING.

Old friends, new friends, got to introduce some folks to some KnightBird Eggs & Bakin' goodies, and enjoy the musical mastery of two of my most-favorite folks: Mark Allan Atwood and my ride-or-die partner in all of the shenanigans, Ethan Ford.

Today I'm restocking our number-one, first-and-best cookies - Gayle's Famous Chocolate Chip, and close runner-up, our Cranberry-Pistachio-Walnut biscotti. Also available this week are our Carrot Cake cupcakes (request them frosting-free for a high-fiber breakfast muffin option), and I will absolutely bake more Texas Sheetcake Cupcakes if anyone has that hankerin'.

We have stocked up on some cute small-serving packaging, so please inquire about creating your own sample combo!

We are hard at work here at KnightBird refining our most popular recipes and gaining new proficiencies. I had to step out of my comfort zone and make myself pipe some pretties, and I am having so much fun with it!

February is for FAFO here at the cottage bakery, and I've been sharing my experiments with some of my favorite people as we work out our packaging and labeling to do some markets in the springtime!

Putting my KnightBird baker's hat back on today, and doing a big batch of Gayle's Famous Chocolate Chip. I have a deep craving for Sister Christy's Coconut Buttermilk pie, so I may have some personal pies for sale this week as well!

With the positive changes to the Texas Cottage Baker laws last year, I will be re-branding KnightBird Eggs & Bakin' in the coming weeks, and we will be dramatically expanding the offerings to include sauces, salad dressings, fermented goods, spice mixes, and hopefully even vegetarian meal kits. If you have ever salivated over Ethan 's many food p🌽rn posts, then do not hesitate to inquire about purchasing some'a that tasty goodness!

For this week, I am sticking to some old standards and working on administrative tasks, so if you have been missing those chocolate chip cookies, challah, or cranberry-pistachio biscotti, let me know and we will hook you up!

Hey there KnightBird fans! I am in the kitchen today playing with some old recipes and new ideas. This heat makes me crave all things lemon, so I am pulling up my Grandmother Dottie's Lemon Chess Pie recipe to test this crazy notion of a Club Cracker pie crust. I know. Sounds a little 👀. But that slightly sweet, buttery-salty crackery crumble? Cradling that tart-sweet custard filling? There may not be any left for y'all after I thoroughly test these babies!

I also have perennial favorite Carrot Cake muffins, 3 for $5, or get them with a thick swirl of cream cheese frosting and call 'em cupcakes, 2 for $5. Gayle's Famous Chocolate Chip are on the bake list for today as well. Ethan's Challah order window is open for tomorrow as well, so yeah. ALL THE THINGS. We're bakin' 'em. Get some!

Shaking the kinks out this week with our all-time favorites: Gayle's Famous Chocolate Chip Cookies, Ethan's AMAZING traditional Challah, and Cranberry-Pistachio-Walnut biscotti. The Challah are baked to order, so get those orders in for pickup in San Marcos tomorrow afternoon! Prices below....
