I am trying to grow these in my garden this year among the sweet potatoes and collards. My mom only made cherry kitchen but here and there I was lucky to try Schwartzenbeeren Kuchen in my past. Thank you to the ancestors who brought these seeds across the ocean!

Seven pints of meatballs just pulled out of the pressure canner. The recipe uses no egg or bread crumbs, which are not safe to can. I roasted the meatballs in the oven till firm. After I poured off the fat and pan juices, I put them in pint jars and topped them off with beef broth. Processing time 75 minutes.

2/28: Found around 4 pm on 2/28. Picked up by animal control. 🔸️Trying to find out which county AC picked up the dog. Not in touch with the finder. Finder posted this info: Found by Buckhorn Reservoir. Dog seems to be well taken care of so I am sure someone is missing it. It is on the way to the shelter with a deputy now.

Six quarts of Beef Stroganoff Base. I got a bargain on meat this week, and it's going into the pantry. The Stroganoff Base will be thickened with a couple of tablespoons of flour, and I will stir in sour cream before serving. Delicious over potatoes, noodles, or rice. We opened one quart for dinner. We get two meals out of each quart. Also canned some black beans. Next photo is pork loin for pulled pork. I made a rub (third photo) and coated the pork. Poured in 1/2" chicken broth. Covered tightly with foil, roasting at 300 degrees or until meat temps at 195-205. I will finish off the pork at 475 degrees till well-browned and I see some crispy edges. Next it will be shredded and pressure canned with Eastern NC vinegar sauce. Into the pantry!

It is becoming apparent that a home garden is a necessity, not a fun hobby. I don't like alarmist rhetoric but I love a plan! Strategic staple gardening coupled with preservation skills will save money and eliminate anxiety during tough economic times. Plan a garden with foods that are easy to grow, have a high yield, are nutrient dense, provide high caloric intake, and store well.

Shop protein sales. Learn preservation skills. Calculate the cost of cans of veg and beans versus canning your own. Plan your meals, don't shop randomly. Instead of trying to bring in more money it makes sense to NEED LESS $.

Twelve quarts Fajita Chicken. Chicken, onions,peppers,black beans, seasonings, chicken broth. Two pints Asian Marinade Chicken because I had leftover chicken from the Fajita jars. Such a good investment of time for quick meals in the future. Today I am putting up yogurt I made yesterday. It has fermented overnight and will be strained, jarred, and refrigerated. A big batch of Tallow Lotion is on today's agenda. I am infusing it with Frankincense and Bergamot. These activities are very grounding and satisfying during this chaotic time of selling the house and looking for a smaller one.
