We hosted two concurrent courses, Gluten-Free & High Protein Pasta Production and Pasta Production from Multiple U.S. Wheat Classes, from October 6–9, 2026, at its facility in Fargo, North Dakota. While each course had a unique focus, participants came together for several shared lectures and demonstrations throughout the week.

NCI’s Grain Procurement Management for Importers course concluded last week after 10 days of exploring grain merchandising, risk management, cash and futures markets, grain quality, and the U.S. grain export system. This year’s course welcomed the largest class in its 43-year history, with 52 participants from 17 countries who traveled to Fargo, ND, and New Orleans, LA, for classroom learning, hands-on activities, and industry tours.

Last week, NCI hosted a Baking with Soy course welcoming back 14 participants from the United States, Costa Rica, El Salvador, Guatemala, and the Dominican Republic. This course spent 4-days baking pan breads, croissants, empanadas, and tortillas, exploring the results of using different amounts of soy flour.
