Amrita Ray, NCI Food Scientist, participated in the Grain Gathering at the Washington State University Breadlab. This event brought together farmers, millers, bakers, researchers, industry professionals, and grain enthusiasts to advance grain innovation through collaboration and education.

During the event, Amrita conducted hands-on stone milling demonstrations with participants, showcasing how milling techniques influence flour quality, functionality, nutrition, and end-use applications while discussing grain processing and ingredient innovation.
