Been such a busy last week of baking and I hardly got any pictures of anything cause it was a finish one thing, move on to the next kinda week!

Between sourdough and gluten free chocolate chip cookies, a 2nd birthday Chocolate with chocolate buttercream construction cake, a fundraiser with 3 different sets of goodies - mini chocolate cupcakes with strawberry buttercream, gluten free vanilla mini scones, and gluten free millionaire bars (shortbread w/maple caramel covered in chocolate) and a wedding cake and 200 mini cupcakes for a sweet sweet friend, I didn’t stop till Sunday afternoon! 😅

The only thing I have pictures of is the wedding cake, but I’ve included the pictures from Pinterest for the scones and millionaire bars so you can see kinda what they ended up like. My scones just had a thin vanilla drizzle on them and not a full covering of glaze and my bars were NOWHERE near as pretty and square 😬 but I am in love with the technique I tried on the wedding cake and it just was so fun to get to do!

I’ve been forgetting to post some of my baking adventures lately. Yes, I’m still baking. Been doing lots of sourdough, which has become one of my favorite things, but I still love getting to try new things and embrace firsts and areas where I can improve.

Amid the craziness life is throwing our way right now, I got to have a little creative outlet moment and make a lovely, simple, with touches of rustic, wedding cake! I love the semi naked look, where the layers of the cake peek through and I don’t get to do it a lot, so I was thrilled when that’s what the beautiful bride wanted! You will see the inspiration photo I was sent and then the cake I created.

It was a vanilla cake with caramel Swiss meringue buttercream inside and vanilla Swiss meringue on the outside. Topped with greenery and a few blueberries and blackberries!

Then I had a sweet friends daughters birthday cake and cupcakes I got to create. It’s one of my favorite combos - chocolate cake with strawberry Swiss meringue buttercream. I had a little fun with the strawberries they wanted on top and cut them into strawberry roses. 🥰 the cupcakes were vanilla/chocolate marble cupcakes with vanilla Swiss meringue buttercream that I used dye free coloring to turn blue - one of the birthday girls favorite colors!

*i also did a tiny cake for her to cut on her actual birthday but I didn’t get a picture of it!

Tried my hand at a GF cookie cake for a UT Masters grad who has missed cookie cake since discovering her gluten sensitivity! I always love to create things for people but put a little extra pressure on myself when it’s something that someone has a vivid memory of and loved in a non gluten free version and haven’t had in years!

A few cakes I have forgotten to post!

The first is a adorable gluten free vanilla 4” smash cake with strawberry buttercream for a sweet 1 year old! It has roses and leaves and is just so fun and happy!

The second is my take on a tricolored Unicorn/mermaid birthday cake. The inspo pictures were a smooth version, a version that was wavy and then one covered in the tricolored rosettes and flowers. So we did a combo of the wavy/flower magic and made it shimmery/iridescent! It is a gluten free chocolate cake with white chocolate buttercream.

Since Wednesday, I have made 10.5 batches of buttercream. Each batch makes about 5+ cups. I have used all but 2 batches, which will promptly get used by the end of this week! My feet, forearms, shoulders all hurt but I truly enjoy creating for people I care about.

I had the pleasure of creating a 50th anniversary cake for a couple who has known me since I was probably 3yrs old. It was an attempt at a replica of their wedding cake. It was so much fun to get to work on and to get to see them celebrated for such an incredible legacy of love and commitment!

Now finishing up some tasty treats for a bridal shower tomorrow and some cupcakes 🧁 for friends.

It’s been a few months since I’ve had many requests for cakes, cupcakes etc. which has been nice cause it’s allowed me to donate some goodies AND discover my love for sourdough and get to practice and bake for my family!

But April is BUSY!! ❤️ and I kicked it off this weekend with 3 birthdays. First was a delish gluten and dairy free chocolate cake with caramel between the layers and dairy free Swiss meringue chocolate buttercream , along with 2 dozen gf/df chocolate cupcakes with df strawberry Swiss meringue buttercream!

Then delivered 50 cupcakes this morning for another fabulous birthday party! These were gluten free chocolate with chocolate Swiss meringue buttercream and gluten free strawberry with strawberry Swiss meringue buttercream!

Finally, and not pictured yet is a birthday cake for my beautiful mom! It’s gf chocolate cake with strawberry Swiss meringue buttercream!

On to the NEXT busy weekend of baking for next weekend 😅

Is it time for a nap? 😅 This weekend ended up being for all the birthday cakes! And with Caleb working doubles and extra appointments for Gabe, it made for a busy week. Plus, don’t for a second think that just cause I can bake, means it always goes well because a few of these gave me a run for their money when they didn’t want to bake up right, resulting in a few repeats! But then the buttercream turned out to be the best ever and the decorating was so much fun, so it was so worth it!

The first one is a GF/df vanilla cake with strawberry Swiss meringue buttercream. It’s decorated with vintage frills and is adorned with a few cherries and then Queen Esther once it arrived at its home.

The second is a gf/df vanilla cake with vanilla Swiss meringue buttercream. It is the scene for David to take on Goliath and I love how the birthday boy picked the location for each figurine.

The final one is a repeat from Gabes birthday but this time for my sister and nephew’s birthday celebration. It may be my favorite cake I’ve made. GF gingerbread cake with homemade caramel, gingersnap streusel and caramel Swiss meringue buttercream.

When I think back on my baking journey, it all feels like it kinda started with a wedding cake about 7 years ago! Sure, I baked here and there! Made Oreo truffles a lot in college but hadn’t really tapped into it…then I offered to make a friends wedding cake when their original baker fell through last minute! And I loved every minute! Since then I have done wedding cakes, anniversary cakes, and more but the wedding cakes will ALWAYS hold a special place!
