Chocolate covered Oreos: a no-bake cookie and a staple in my holiday lineup.

Here’s how to make them:
1. Melt almond bark in the microwave or a double boiler (I prefer the double boiler).
2. Dip chocolate sandwich cookies, lift out with a fork, gently shake off the excess, and place on parchment, wax paper, or a silicone mat.
3. Add non-pareils or any fun sprinkle and let set.

Easy and delicious.

I take chocolate very seriously. With a rich cocoa flavor and a classic snowy powdered sugar crackle, ā€˜s Chocolate Crinkle Cookies deliver. Every time. They’re a two step process (because chilling the dough is a must) but 100% worth the effort.

I’ve baked THOUSANDS of sugar cookies, and my go-to recipe is: ā€˜s ā€œVanilla Cutout Cookies That Don’t Spread.ā€ This is the recipe I use for custom orders, cookie classes, & Christmas cookies!

Here are a few tips for to make them perfect every time:
1. Butter: cold but spreadable. Too soft won’t work.
2. Mix each step just until combined. Overmixing ruins the dough.
3. If you have a kitchen scale, weighing ingredients is best (this goes for every recipe), but it will still work fine without a scale.
4. No vanilla bean paste? Substitute 1 teaspoon of vanilla extract for a total of 2 teaspoons in the recipe. (I typically do this.)
5. Chilling isn’t required, but I always get better results when I do.

Rumor has it these chocolate chip cookies are Santa’s absolute favorite! Perfect for Christmas… or, let’s be honest, any day of the year. šŸŖ Kicking off Christmas baking 2025 with a CLASSIC!

Save this tried & true chocolate chip cookie recipe that I’ve been using for over 20 years!!!

PRO TIP 1ļøāƒ£: This recipe makes 5 dozen. If you don’t need 60 chocolate chip cookies, freeze part of the dough to use for a second round fresh baked cookies later! (Scoop it into individual portions, freeze, & then pop them into a container or ziplock. Add 2 minutes to the baking time & you’re all set!). OR freeze fully baked cookies & add them to lunchboxes as a special homemade treat!
PRO TIP 2ļøāƒ£: You can use this recipe right away, but it’s even better if you cover and refrigerate it for a minimum of 2 hours (I prefer overnight) to allow the flavors to blend develop & the flour to fully hydrate.

1 cup granulated sugar
1 cup packed brown sugar
1 1/3 cup shortening
2 eggs
1 1/2 teaspoon vanilla extract
1 tablespoon water
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped nuts (optional)
12 oz (2 cups) semi sweet chocolate chips

- pre heat oven to 375
- mix sugars, shortening, and eggs
- stir in flour, baking soda, vanilla extract, water, and salt
- stir in nuts (if using) and chocolate chips
- drop onto ungreased cookie sheet and bake for 8-10 minutes (centers will be soft)

It’s officially the most wonderful (baking) time of the year! I’m about to fill every Rubbermaid container I own with dozens (hundreds?) of cookies as I bake for neighbors, friends, teachers, school staff, and family.

Over the next two weeks, I’ll be sharing the tried-and-true recipes I’ve tested for ease and quality as I work my way through a whole lineup of holiday favorites.
