I could use some help...

We just got a 1 star review on Yelp from someone that's just trying to take the wind from our sails. Yesterday was bittersweet but filled with beautiful moments.

Please help us go out on a high note with some love on Google and Yelp. Somehow, someway, someday we just might return!

Chapter 26 - The Grand Finale.

26 months and almost 250,000 bagels later, today is the day. The bittersweet moment when we can genuinely see, hear, and feel all that has been accomplished.

Without you, our loyal customers, friends, family, and fans, none of this ever would have happened.

We hope for the opportunity to make your breakfast one last time, so I'll say it one last time...

Bring it in for the real thing because...

Rolleyholers final weekend begins...

Unable to find the words myself, I'll lean on some local brilliance.

Two roads diverged in a yellow wood,
And sorry I could not travel both
And be one traveler, long I stood

Happy Sunday, friends!

Just because we're closing our doors doesn't mean we're slowing down!

I've got a bunch of specials this week, including Apple Cider, Sundried Tomato and Basil, and one I've never done before, the Pizza flavored bagel!

We also have Crumbcake both this weekend and next week.

We hope you're all enjoying this Labor Day weekend while we toil away making bagels. We're officially down to our LAST WEEK OPEN!

If you're away, don't worry. There's still one more week before we move on to the next chapter of the Rolleyholers project!

What happens next is still a mystery, but 🎶 with a little love and luck, we'll chase the sky 🎶 (Rest easy Captain Jimmy, for you it's 5 o'clock everywhere!)

I am SO proud of this kid!!!

For nearly 2 years, Genevieve has worked, no OWNED our register. Our very first hire, she was a timid and unsure 14 year old growing into her own skin... Today was her last day; she's leaving for COLLEGE! The confidence you've built is amazing. You WILL bring great things to this world.

While making pizza dough the other night, I had an Epiphany... So I chased it down this morning...

Results:
✅️ Crumb Texture
✅️ Crust Texture
✅️ Shape
✅️ Taste
⛔️ Color (Too Dark)

They're far from burnt, and there's no bitter taste, but decreasing the oven temp on the next few to see if there's improvement.

A BECSPK on these... WHOAH!!!

Another jersey was awarded today... Meet Kelly, who truly amazed me from the moment I interviewed her. Only with us a few months, Kelly dove in with both feet, determined to learn everything possible. As our weekday kettle and oven, she quickly figured out times, temps, and how dough should feel. Baking fresh bread requires understanding more than just its appearance, and often, your other senses take precedence. This is where Kelly truly blew my mind. Kelly is legally blind, yet kettles and bakes to perfection every time. Determined, Kelly has shown REAL GRIT; and for that, you're forever one of us.

Today was also a rare opportunity to have the ENTIRE team in one place for a photo opportunity, AND get (almost) all of our jerseys together for a shot. Even Shelagh is back from college to help out for a few weeks. Unfortunately, Clara was away with family but sent her regards and appreciation.

This team means everything to Heather and me. Seeing these jerseys together is proof that Rolleyholers is a success.
