🫛 From the garden to the freeze dryer!

We grow Calima green beans, and they are delicious and string-free! While I still prefer our green beans canned when we're having them as a cooked side dish, freeze-dried green beans make a fantastic crunchy snack.

We blanch them first, then freeze-dry them plain or toss them with seasonings. We just finished a batch with a sweet & spicy seasoning. 🌶️🫛

🌿 The last of our homegrown dill is headed into the freeze dryer!

There’s just something special about using herbs you grew yourself. And dill is one of those herbs that holds onto its flavor incredibly well through freeze-drying. That fresh, bold dill flavor is still there when it's done!

This is the last harvest of our dill for the season, so into the freeze dryer it goes.

🍅 What does a 5-gallon bucket of homegrown tomatoes look like after freeze-drying?

About 3/4 of a half-gallon Mason jar of tomato powder! 😳

I blend the entire tomato—then freeze-dry it and turn it into a powder. Nothing complicated, just a really good way to preserve that incredible fresh-from-the-garden tomato flavor.

And the best part? You can turn the powder into tomato sauce OR tomato paste, depending on how much liquid you add back. You control the consistency!

The flavor is incredibly concentrated and has that bright, crisp tomato taste that you just don't get from a lot of store-bought products.

I've actually moved away from canning my tomato sauce and now freeze-dry the tomatoes instead. It takes up so much less space, and I can make exactly the amount of sauce I need when I'm ready to use it.

The first Calendula blooms of the season have arrived!

There are only a handful of flowers right now, but this is just the beginning. Before long, these plants will be covered in bright golden blooms.

Calendula has been treasured for generations and is often called the "skin-soothing flower" because of its traditional use in salves, creams, and other skin care preparations.

This year's crop has a very special purpose for me. I'm growing these beautiful flowers to make a homemade Calendula diaper cream for my first grandbaby, who will be arriving later this year. 🩷

Is Freeze-Drying the best preservation method for herbs?

This side-by-side comparison of chamomile shows why freeze-drying is considered one of the best preservation methods available. Not only does it retain more of the herb's natural color and appearance, but studies have shown that freeze-drying can preserve more of the beneficial compounds and medicinal qualities than traditional drying methods.

The freeze-dried chamomile on the right still looks remarkably close to the fresh-picked flowers on the bottom, while the air-dried sample on the left has lost much of its color and vibrancy.

When it comes to preserving herbs, appearance is just the beginning—the real value is in preserving the qualities that make the herb useful in the first place.

We've been working on a new treat, Dark Chocolate Strawberry Clouds. Freshly pureed strawberries and a little pineapple juice, freeze-dried, then coated with Ghirardelli dark chocolate. These little flavor bombs are amazing!
