Seventy five years ago, there would have been nothing special about our bread. We would have been just another neighborhood bakery using a levain
(wild yeast starter) and relying on local ingredients, time, temperature, and our hands to create a simple, but complex, loaf of bread. Today, we employ those methods from long ago, and that's what sets us apart. After hand turning the dough for several
hours the bread is ready to be shaped into a loaf. The loaf is left to rest overnight in a cool environment that allows the bread to slowly ferment and develop a complex taste. Why the name Hewn? It refers to something hand shaped, having a rough or uneven surface. That pretty much sums up our bread. What about the oven? It is an imported oven with a stone hearth and steam injection, which allows us to create a delicious crust. Because each loaf is hand shaped, each loaf is truly unique and beautiful (in our opinion). In addition to our breads, we offer a wide range of pastries, sweets, sandwiches and espresso. Catering services are also available.
