We’ve been experimenting with this new modern cheesecake style, and this one is definitely a little more premium. 🍋✨

It features a reconstructed cookie crust made completely from scratch, covering both the base and the sides, with a creamy cheesecake center, homemade lemon curd, and a light meringue finish on top.

Everything is made from scratch with natural ingredients, and we really love the balance between the buttery cookie crust, fresh citrus flavor, creamy cheesecake, and soft meringue.

We’re still playing with new combinations, so tell us… what flavor should we create next in this style? 👀

We wanted to share a little something new we’ve been working on! 🤎 We recently took a new pastry course focused on cheesecakes, and we’re always studying and learning new techniques to keep improving what we offer.

This is our first Modern Style Tiramisu Cheesecake — made with a reconstructed chocolate cookie base and walls from scratch, rich espresso notes, mascarpone & cream cheese filling, and mascarpone chantilly.

I wanted to create a Basque cheesecake for those who can never choose just one flavor. This one combines Lotus Biscoff, Chocolate Kinder Bueno, Pistachio, and Vanilla & Ube — each section with its own topping, texture, and flavor.

Handcrafted in small batches and made fresh here in Escondido, CA. 🤍
