Those tiny air pockets and soft texture inside your favorite slice actually have a name—the crumb!
Bakers use “crumb” to describe the internal texture and structure of a cake. A fine, even crumb usually means a soft, tender bite, while other cakes are meant to have a more open or dense crumb.
Now you have the perfect excuse to examine your next slice VERY closely. You know… for research. 😉
