You may be able to bake more loaves at once when they are shaped in a bread pan, but you’ll never convince me it’s better than a traditional Boule or Batard. The spiral score is my favorite because it gives dimension with plenty of release for steam, all while maintaining the beautiful lines from fermentation in the banneton basket.
