The sourdough craze is huge right now. However, do you know the actual benefits of sourdough vs yeast? Let me share with you.

1. Easier digestion. It is not gluten-free, however, the fermentation process breaks down the gluten and makes it easier to digest.
2. Lower glycemic index. Sourdough causes a slow rise in your blood sugar than other breads.
3. Increase nutrient availability. It allows the body to absorb zinc, iron and magnesium better.
4. It supports gut health. It contains prebiotics, which nourishes healthy gut bacteria.
5. Lower risk of spoilage. The acetic acid produced naturally allows for a longer shelf life.
