Chocolate Buttercream Strawberry Grape Cake

Ingredients:
For the Cookie Base:
24 chocolate wafer cookies (or dark chocolate cookies)
1/2 cup whole milk
1 teaspoon vanilla extract
For the Chocolate Buttercream Filling:
16 oz cream cheese, softened
1 cup mascarpone cheese (or unsalted butter, softened)
3/4 cup dark cocoa powder or melted chocolate
3/4 cup powdered sugar
1 teaspoon vanilla extract
2 cups heavy whipping cream, cold
For the Strawberry Grape Layer:
1/2 cup fresh strawberry preserves or grape jam
1/2 cup fresh strawberries, sliced
1/2 cup fresh seedless grapes, halved
For the Chocolate Glaze:
8 ounces dark chocolate, finely chopped
1/2 cup heavy cream
For the Decoration:
Fresh whole strawberries
Fresh seedless red or green grapes
Piped chocolate buttercream rosettes
Dark chocolate curls
Dark chocolate shards
Fresh mint leaves
Unsweetened cocoa powder for dusting
Powdered sugar for dusting
Directions:
Line the bottom and sides of an 8-inch round springform pan with parchment paper.
Stir the vanilla extract into the milk. Quickly dip each chocolate cookie into the milk mixture and arrange them in a single layer to completely cover the bottom of the pan.
In a large mixing bowl, beat the cream cheese, mascarpone, cocoa powder, powdered sugar, and vanilla extract until completely smooth and creamy.
In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold it into the chocolate cream mixture until light, airy, and fully combined.
Spread one-third of the chocolate cream over the cookie base.
Spoon half of the strawberry preserves evenly over the cream layer, then scatter sliced strawberries and halved grapes across top.
Arrange another layer of lightly dipped cookies over the filling layer.
Repeat with another layer of chocolate cream and the remaining fruit layer, then finish with the remaining chocolate cream. Smooth the top with an offset spatula.
Refrigerate the cake for at least 8 hours, or preferably overnight, until fully set.
Heat the heavy cream until just simmering, pour over the chopped dark chocolate, and stir until smooth and glossy. Spread an even layer of chocolate glaze over the top of the chilled cake.
Pipe elegant chocolate buttercream rosettes around the outer edge.
Decorate with fresh whole strawberries, fresh seedless grapes, artistic dark chocolate shards, delicate dark chocolate curls, fresh mint leaves, a dusting of cocoa powder, and a light dusting of powdered sugar for a stunning pâtisserie-style finish.
Chill for another 20 minutes before unmolding and serving. Slice with a warm knife for perfectly clean layers.
