Mom called it "Friday" sauce, dedicated for those meatless days. Today you know it as Onofrio's Marinara. As kids we would tear off hunks of bread to dunk in the sauce while cooking, getting caught was another issue.

experimenting with baked fennel. trim stalks, cut in 1/4" slices, remove core, saute in pan with butter and oil, remove, layer fennel slices in oiled glass baking dish. top with 1/2 jar Onofrio's Marinara, plenty of grated parm. bake 450º for 30 mins. or until top is crusty and fennel is fork tender.
