Granola Fruit Wraps 🍓🍯
Here’s what you’ll need:
• 1 cup mango, diced
• 1 cup strawberries, diced
• 2 Tbsp lime juice • 1/3 cup Organic Hive Honey
• Pinch salt
• 2 Tbsp cornstarch + water slurry
• 1 cup Uncle Crumbles Cinna-Maple Crunch granola
• Coconut oil for frying
1. Cook fruit, honey, lime & salt over medium heat. Stir in cornstarch slurry (important—prevents clumps). Chill 3+ hrs until cold.
2. Dip rice paper in warm water. Add crushed granola + ~1.5 Tbsp filling in a line, top w/ more granola, roll tightly. Wrap again in a second rice paper.
3. Shallow fry in hot coconut oil seam-side down, rolling + pressing air bubbles until crispy. Don’t overcrowd. Drain on parchment.
4. Top w/ honey + granola. Eat hot.
