This pumpkin pie is actually delicious, which is extremely rare for pumpkin pie. We are making a 100% butter, hand rolled crust this time around. We will also have caramel apple pie with crispy streusel, quiches, rolls, bagel platters, and most importantly a strong, projected sense of compulsive holiday cheer.

Some nice layers in the morning twilight. If only I could capture the silence. Before the customers, kitchen staff and servers. No music, no distractions, just completely focused on the work at hand. It’s the best part of the day.

Holiday #1 Dump…. Croissants, bagel platters, the burrito…. And a poppy bagel, which is a severely under appreciated topping. Try a well toasted poppy bagel for the first time in your life and tell me it’s not amazing.

I feel threatened. From a 6 mm sheet to a massive 1 7/8 inches. These pastries are setting unrealistic expectations, and someone needs to eat them before we’re all cast aside.

Just appreciating this amazing berry run before we move into local strawberries…. Those layers though! Tweaked the dough base to give even more definition and crisp. We develop from scratch and optimize forever. Good enough isn’t.

We always develop recipes from scratch and persistently obsess over iterative improvements. The chocolate croissant now has a 72% baton AND a cocoa rouge cream similar to almond cream, so you get two completely different chocolate textures and flavors in one croissant. Also included are more shots of the progress and a raspberry frangipane tart with 3 layers of vanilla hidden underneath.

This is my bagel, the way I like it, the way a lot of people like it, but I also love the way thousands of other people make their own unique bagel. Now there are too many fools and egos spouting nonsense about how there’s a best bagel, only one way to make a bagel, it has to be this way that way no air pockets, no that, all this, blah blah blah. Clowns taking a product that was diverse and varied from its very beginning and turning it into their little American consumer ego trip. Every time and does another article about a “best” bagel it makes my skin crawl.. there is no such thing, only preference and culture. Also, H&H bagels are a 6/10 absolutely average and it’s not even the real original company.
