Remember that that was all over Facebook? Well, tonight I made it. Spaghetti Squash Chicken Parm! /// Just because I love cooking and being creative doesn't always mean I am original. Sometimes I like to put things to the test. Is the Tasty video as easy as the 30 second clip succession shows it to be? I would say yes! I took a few extra steps to "make it mine". When I realized I didn't have a can of crushed tomatoes in the house ( I'm officially a jarred sauce snob...I WILL NEVER!) I took the extra steps to grab tomatoes from my garden that my grandfather lovingly tends everyday....roasted them in the oven with garlic and olive oil, then blended them after they had some good color on them. { Over Achiever Status: Level 5,000} THEN... I also decided my cast iron skillet needed to be tested in // THINGS FRIED// and fried up my chicken breasts. Duh....no pasta = a little wiggle room to cheat. LESSON LEARNED: After you roast the squash halves upside down for about 30-40 mins at 400• turn them over, use a fork and pull all the pretty spaghetti-like flesh....then return to the oven for another 10 mins! This will eliminate the liquid you see all over my plate! I am far from perfect, even when it comes to cooking and baking 😜 SOOO, I'll take this note, commit it to memory, and give it a go again in the future. Remember, just get in the kitchen and try. Chances are no matter what you do, you'll still have something edible at the end.
