Hello all you lovely cookie fans! Many have you have asked for a cookbook - and no, I am sorry to say that so far, I haven't written one - but today, as it is my birthday I want to celebrate by sharing this recipe that I wrote for my sweet mother. These are the coconut cookies that I sold for years at VLC. I had to really work to get it down to a home sized recipe so please be patient with the weights (volume measurements just really don't work in cutting something down of this size). You can either choose ounces or grams, up to you, I've provided both. Enjoy!!

Hello everyone! Did you all make it through the holidays? I have to say that, although I missed all my customers, it was heaven being at home, in front of my own ovens, baking for family. Believe it or not, I have actually been baking a lot - creating new flavors as well as scaling down VLC recipes to hopefully share with you all in the future. If you are interested to know what I'm working on I'd love to see you on Instagram. As many of you know the bakery has been closed for the month of August . Greg and I took time away to reflect and consider and after much deliberation we have made the decision to close both VLC and DBC permanently. It’s been a long run- almost 29 years for DBC and nearly 16 for VLC. We will miss you, our fabulous customers and business community. We’ve been blessed with your support and we thank you so very very much for the years.
Let's keep in touch. You never know what amazing opportunities are even now becoming manifest. Best wishes to each and every one of you, k.

Going off brand for a minute folks: its COLORADO GIVES DAY! This is actually one of my favorite days of the year as you get to choose a non-profit to support. There are so many great ones of course but here's one I can highly recommend. I've been volunteering with REF for the past year so I know for certain that your money will be well spent and much appreciated - not just by the administration but by the glorious raptors! Raptor Education Foundation - located in Brighton Colorado and devoted to environmental literacy for more than forty years, REF houses non-releasable raptors who now spend their days delighting children and adults alike at various educational venues.
