Red Velvet Wreath Cake

Ingredients

Red Velvet Bundt Cake:
2 ½ cups all-purpose flour
1 ½ cups granulated sugar
1 tsp baking soda
2 tbsp cocoa powder
1 ½ cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tbsp red food coloring
1 tsp vanilla extract
1 tsp white vinegar

Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract

Decorations:

Fresh cranberries (or sugared cranberries for a frosty look)
Small sprigs of rosemary (to mimic evergreen leaves)
Powdered sugar (for a snow-dusted effect)

Instructions

Preheat Oven and Prepare Bundt Pan:

Preheat your oven to 350°F (175°C).
Grease and flour a Bundt pan thoroughly to prevent sticking.

Make the Red Velvet Cake:

In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
In a separate bowl, whisk together the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Bake the Cake:

Pour the batter into the prepared Bundt pan.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then carefully invert it onto a wire rack to cool completely.

Prepare the Cream Cheese Frosting:

In a medium bowl, beat the cream cheese and butter until smooth and creamy.
Gradually add the powdered sugar and vanilla extract, beating until the frosting is thick and fluffy.
Transfer the frosting to a piping bag fitted with a large star tip.

Decorate the Cake:

Once the cake has cooled, pipe swirls of cream cheese frosting around the top of the Bundt cake to resemble a wreath.
Arrange fresh cranberries and rosemary sprigs on the frosting to resemble holly and evergreen leaves.
Dust lightly with powdered sugar to give a snow-dusted effect.

Serve:

Carefully transfer the cake to a serving plate or cake stand, and enjoy your festive red velvet wreath cake!

I apologize for posting this twice but I hate to bring it up but the Holidays are swiftly approaching.

I'm excited to be doing a "Big Thing" for a new customer. A joint birthday party for a two year old with a Hungry Caterpillar theme and an Adult/older sibling Halloween party. I can't go into more detail but I will post photos after.

Patti McCann Parks has been so busy this weekend with food for Benji Parks Graduation party and getting ready for Art in the Park that I forgot to say I would ne there. I will have the Mini and Petite Festival boxes and also a Mini container of “Just Fruit”. Come and see us! We will be with the other food vendors

I had a successful day at the Lilac Festival. It started out a little slow but it was chilly and a little breezy but it warmed up and people must have been waiting for that to happen. I hope my good customers and the new ones will be telling their friends. Have I said that I love making charcuterie? Lol. 😁😁
