Freezing and subsequent thawing of bread completely alters its glycemic index by fundamentally transforming its starch through a process called retrogradation.
When bread is baked, its starches gelatinize, making them highly accessible and rapidly digestible by enzymes in your small intestine, which causes a sharp spike in blood glucose. However, when you subject that same bread to freezing temperatures, the amylose and amylopectin molecules recrystallize into a highly ordered structure known as resistant starch.
This newly formed resistant starch physically resists enzymatic breakdown, acting more like dietary fiber that passes into the large intestine largely intact. Clinical research has demonstrated that this biochemical shift results in a significantly blunted glycemic response, generating roughly 39% less of a blood sugar spike compared to eating the exact same bread fresh.
