What an amazing night at Monday Fun Day!

Chris had the BEST time making new friends, playing video games with Dan, dancing and, of course, fanboying over Deejay Amazin all night! The DJ was AMAZING and Chris was absolutely in his element.

The kitchen was just as much fun. Chef Nikol got everyone involved, teaching the attendees how to make hummus while her chefs showed the group how to grill burgers. Chris loved being part of the action and getting hands-on.

From cooking and games to music, dancing and new friendships, it was such a special night.

We are so thankful to Nikol Zarbalas for opening up HellenicHellenic and creating a safe, welcoming space where young adults can connect, learn, make friends and simply be themselves. What a beautiful night of inclusion, community and FUN!

Chris is so excited for Monday Fun Day tonight at Hellenic. He’s looking forward to meeting new friends, connecting with other young adults and enjoying an evening where he can just be himself.

As a mom, watching him have opportunities to build friendships and be part of a welcoming community means so much.

Here’s to new friends, new connections and a fun night ahead!

I honestly wasn’t prepared for the response to Chris’ story.

Thousands of you have reached out. Parents. Educators. Therapists. Caregivers. Young adults. People wanting to volunteer. People simply saying, “Thank you.”

I’ve been reading every single comment and message, and one thing is abundantly clear…

This community needs this. So…we’re doing it.

Our very first Monday Fun Day will be Monday, August 17th from 6:00–9:00 PM at Hellenic.

This isn’t something I want to rush. I want to build it the right way—with the people who know this community best.

If you have experience working with individuals with special needs, sensory accommodations, adaptive cooking, or if you simply have a heart to serve, I’d love to hear from you.

If you have a young adult who would enjoy an evening of cooking, friendship, and community, please comment below or send us a message so we can learn more and get you registered.

We’re building this together, and this first event is just the beginning.

Hellenic has always been built on the belief that everyone belongs. Monday Fun Day is simply another seat at the table.

THE FINAL CAKE OF THE KING BIRTHDAY TRIO!

This one was extra special because it was CHRIS’ cake!

A mini Gluten-Free + Sugar-Free Spider-Man cake just for our birthday boy!

We started King’s Sweet Creations last October, and Chris has been making desserts with us ever since. But with his strict diet, he hasn’t had a decorated birthday cake in YEARS.

So when he asked for a REAL birthday cake of his own… we made it happen!

And of course… SPIDER-MAN was the only choice! 🕷️

Two cousins + an aunt. Three birthdays. Three cakes. One BIG celebration! 👑

🎣 FISHING CAKE REVEAL! 🎂

This one was extra special because it was part of The King Birthday Trio! 💙

Chris and his cousin Dalton are just 14 days apart, so this year they celebrated their birthdays together the best way possible—riding ATVs, enjoying some delicious churrasco, and of course… CAKE! 🎉🏍️🥩🎂

For Dalton, we created a 6-inch, 3-layer chocolate fudge cake filled with Nutella and buttercream, topped off with a fun fishing theme! 🎣🍫

A special cake for a special cousin—and we absolutely loved being part of their birthday celebration! 💙

For everyone asking what Chris was making with all those eggs… here’s your answer! 🎂

A 6-inch, 3-layer carrot cake with cream cheese frosting, designed as a pink flower pot with a rose 🌹 for Aunt Theresa’s birthday!

We’ve been BUSY in the kitchen getting ready for today’s King Birthday Trio celebration. This is cake #1… and we still have TWO more cakes to come! 👀🎂🎂
