Spend five minutes with me and you’ll quickly realize my life revolves around cooking, baking, and tasting everything!

👩‍🍳 It is delicious, but all that indulging means I have to be intentional about doing something simple and healthy just for me.

That’s where Metamucil comes in. It’s my favorite daily ritual for keeping things balanced. Did you know that 90% of Americans don’t get enough fiber through diet alone?

Adding fiber to reach your recommended daily goals is incredibly important for your broader health, and Metamucil makes it so easy to build that daily habit.

How do you find your balance during the week? Let me know below! 👇

Kitchen Confidence Episode 11: Creamy Tuscan Chicken Orzo 🍝✨
The series where I teach you how to make restaurant-quality dinners at home without dirtying every pan in your kitchen.

This one-pan creamy Tuscan chicken orzo is packed with tender chicken, garlic, spinach, sun dried tomatoes, parmesan, and a rich creamy sauce that tastes way fancier than the effort required.

Ingredients:
• 1½ lb chicken tenders
• 1 tsp paprika
• 1 tsp Italian seasoning
• Salt + pepper
• 4 cloves garlic, minced
• ¾ jar sun dried tomatoes
• 1 cup orzo
• 2 cups chicken stock
• ½ bag spinach
• 1 cup heavy cream
• 1/2 cup Parmesan cheese
• Parmesan cheese for topping

Directions:
Season chicken with paprika, Italian seasoning, salt, and pepper. Sear until cooked through, then remove from the pan.

Add garlic and sun dried tomatoes to the same pan and cook 1-2 minutes.

Stir in orzo and chicken stock. Simmer until the orzo is tender.

Add spinach, heavy cream, basil, and parmesan. Stir until creamy.

Return the chicken to the pan and simmer a few more minutes.

Top with extra parmesan and pretend you paid $28 for it at a restaurant. 🤌

Rich isn’t always money.

Sometimes it’s about surviving things that should’ve broken you and still being able to find joy in creating something beautiful with your hands, and still finding reasons to smile after everything fell apart.

Some days I still feel ashamed and embarrassed. Some days I don’t know who I am without it.

What I wouldn’t give for 40 million followers. 🫥
