🌾 I decided to take some downtime to come up with new recipes + even better ingredients for Sour Made Sweet. My husband has had a very difficult time managing his blood sugar and has had some health concerns regarding diabetes. I began researching out wheat, glycemic index, blood 🩸 sugar spikes, inflammation, and gluten. A family friend of ours and natural herbalist mentioned Einkorn flour to me. A miracle wheat that didn't cause inflammation or blood sugar spikes, issues with gluten and it sounded too good to be true, but it's not! It is a huge blessing to still be able to enjoy a wonderful piece of sour dough bread, a bagel or English muffin. ☺️ I wanted to update on an ingredient change and offer a completely new flour, since I want to provide the most organic, wholesome and truly good for you kind of breads.
Furthermore, as you know because of the fermentation process of sour dough it is great for your gut health! But, unfortunately if you’re pairing the wrong flour with it, you’re doing more harm than good. Today most flours used whether organic, unbleached or not - contain harmful ingredients because of the pesticides used these days. Moreover, wheat has been sadly altered by the government and it has been a real digestive nightmare for most people, hence why so many of us are going glutlen free. If you'd like more information on this topic - there's a great book out there called "Wheat Belly" written by a cardiologist. With that being said, I will be offering (as well as my sour dough loaves) Einkorn only loaves for you and your families. Einkorn is the most primitive wheat! Einkorn has it all over modern wheat when it comes to nutrition. It has a higher protein content than modern wheat, and it offers 3-4 times more beta-carotene, twice the vitamin A, and four times the antioxidants!
I have started to make an entirely new starter only using the best quality ingredients. My price will stay the same, even though this new flour is a bit more costly. I want it to be affordable for everyone. Love you all 🥰
So excited to serve more of you! I should be able to start baking in the next two weeks! I’m grateful to be able to offer this new loaf for you - in both sandwich bread loaves and round loaves. 🌾 I have a list of people so far. I will also start to incorporate Einkorn into other recipes as well - such as my sour dough chocolate chip cookies and other desserts!
