DeLiberato's Bakery We are a made to order Gluten Free bakery in Cuyahoga Falls, OH. So why gluten free? Laurie was diagnosed with celiac in 2009. Every. Day. But! But, why a bakery?

Going gluten free has been a game changer in her health. But the reality is, we are still normal people. We enjoy eating a piece of bread that doesn't taste like cardboard. We want to have pancakes on a Saturday morning with our kids that are easy to make while we sip (read: down) coffee because our children still wake up with the sun. So we began baking and researching how to make non cardboard g

luten free food. There has been a lot of trial and error to find what worked well for our family. Maybe even some tears as cakes fell apart the night before a party. Slowly we found our way. We could have brownies on a whim because someone was in the mood for them. Birthday parties are covered. Brunch, we've got you. We want to share the goodness of a delicious scone made fresh. We want others to have a brownie that will put a box to shame. We want people to have a treat that they want and not one they settle for. Eating gluten free doesn't have to mean you won't enjoy treats again. You can have your cake and eat it too, because it's gluten free.

Do you ever try a gluten free cookie and feel utterly surprised? We get it. Gluten free has a reputation.

So what’s different? A lot actually. It starts with the ingredients and the method. Not just switching the flour, the trial and error to make it just right.

The texture.
The temperature.
The timing.
The ratios.
All of it matters.

Most importantly—
we don’t approach gluten-free baking as a limitation.
We approach it like a challenge we fully intend to win.
The goal isn’t to make a “good gluten-free cookie.”
The goal is to make a cookie that makes you forget gluten was ever part of the conversation.

And based on the number of double-takes we see every day…

we’re on the right track.

It’s simple: It’s personal.

We’ve never heard anyone say “it’s just a cookie”

Because it’s not.

Whether it brings nostalgia, or you had a tough day, food has a way of attaching itself to memories.

And for a lot of people, gluten-free hasn’t always been part of those moments.

We hear it more than you’d think—
“I usually skip dessert.”
“I just watch everyone else eat.”
“I’ve gotten used to it.”

And that’s the part that never sits right with us.
Because food—especially baked goods—isn’t just about eating.

It’s about being included.
It’s about not having to explain yourself.
Not having to settle.
Not having to say, “I’ll pass.”

So when someone takes a bite of one of our cookies and pauses for a second…
That’s the moment.
That’s the moment where it stops being about gluten-free.
And starts being about finally getting to enjoy the same experience as everyone else.

Also, yes… they’re usually surprised.

We take that as a compliment.
