Savarin is a yeast-leavened French cake, similar to a rum baba, that is soaked in an Earl Gray syrup, flavored with rum extract, brushed with apricot glaze and topped with whipped cream and mascarpone cream and mandarin oranges. Its light, airy texture comes from the yeast and the hole in the center, which allows for even heat distribution during baking.
