The secret to clean piping? Your chocolate has to be just right — not too thick, not too runny.

If it’s too warm, it runs everywhere. Too cool, and it clumps up mid-pipe. I let mine sit for just a minute after melting so it flows smoothly but holds its shape. That’s how you get crisp, readable names every time.

Graduation season is HERE and these diploma pretzels are flying out of my kitchen! 🎓🎀

April nearly broke me this year.

Easter orders. Derby pop-ups. Corporate requests piling up.

My schedule was maxed out.

Then I got the email.

A local nonprofit I love asked if I’d donate again this year.

Last year, I donated AND made them a $100 basket for their fundraiser.

This year? I knew I couldn’t do both.

I sat with that for a minute.

Because here’s the thing about running a small batch business:

You can’t pour from an empty pot.

So I said no to the basket.

And yes to what mattered most — showing up for my community the way I actually could.

I made the donation. I fit it in. I made it a priority.

Not because I had the bandwidth.

Because it aligned with why I do this in the first place.

Sometimes protecting your capacity IS the gift.

The #1 mistake beginners make with chocolate is heating it too fast and too hot. LOW and SLOW is the key. I primarily use compound chocolate or chocolate wafers in my business. They melt easily if you melt them slowly and stir often. If using a microwave, 70-80% power level and stir every 20 seconds. Chocolate can overheat easily and will seem thick and clumpy when it’s too hot. For more chocolate tips, be sure to FOLLOW ME and I’ll keep sharing.
