Today was a reminder to stay humble. Donāt get too comfy, your ass is waiting to get kicked any minute now. And mine got kicked today.
The long and short of it is that our walk in cooler broke down over Thursday night, with all of our bread and pastry products for two markets this weekend in there. Most of the sourdough boules over-proofed, and the pastries had to be baked way ahead of their usual schedule. The bread in particular is⦠fine. A little flat, not our usual standard but definitely not something to waste. So all our sourdough boules are $5 tomorrow.
We put our sandwich breads into the fridge under-proofed on purpose, we usually proof them Friday, so they just proofed overnight instead. They are perfectly fine and baked well.
The pastries baked beautifully, they benefitted most from the slow proof, but theyāre not going to be out the oven fresh tomorrow morning. Weāll knock a couple of $$ off them too.
All of this is to say that we have a TON of items for yāall tomorrow at the Covington Farmers Market from 8am, including the roasted red pepper, feta, and dill croissant you see pictured that I am eating as I type this.
