Lemon Poppy Seed Muffin

Ingredients
2 1/2 cups flour, all-purpose
1 cup sugar
2 tbsp poppy seeds
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter, melted
2 tbsp vegetable oil
2 eggs
1/4 cup sour cream
2 tsp vanilla bean paste
1/4 tsp lemon extract
2 tbsp lemon zest
1 tbsp lemon juice
1 cup milk

Directions
Mix all dry ingredients together and whisk until combined. Mix all wet ingredients together in a separate bowl. Combine wet and dry together to make a batter. Let rest for 1 hour. Make a batch of Lemon Simple Syrup by boiling 1 cup of water, 1 cup of sugar, and the lemon rind of one large lemon, together for 2 minutes. Let cool. Scoop muffins and bake at 430F for 8 minutes and drop the oven temperature to 350F continuing to bake for an additional 8 - 10 minutes. While the muffins are still hot, brush the muffin tops with the syrup.
