I took this picture of our whiteboard this morning and kind of laughed because… this is actually a “slow” day. I thought maybe it was worth sharing, not as a “look how much we do” post, but because you normally only get to see the other side of our bakery.
You see the pretty loaves, scones and cookies lined up at the market but you don’t see everything that happened before they got there. This whiteboard doesn’t include the 200+ artisan loaves already prepped Thursday and Friday… It does include the 24 focaccia, 25 baguettes, 10 sandwich loaves, 13 dozen cookies and 24 boxes of scones already made or prepped.
It doesn’t include my 4-hour round trip to Gilbert for my second wedding dress alteration, or David coming home from night shift, sleeping for three hours, and getting back up to finish dough while I was gone. It doesn’t include school drop-offs and pickups or cramming 8 homeschool lessons into two days this week.
And it definitely doesn’t include the 30,000+ steps since Thursday, roughly 15 miles around our own house, hauling 50-pound loads of bread upstairs and out to the truck, or the 31+ flights of stairs between our home and bakery.
And somehow… this is the life we chose. 🤣😂
I don’t share this because I want anyone to feel sorry for us. We genuinely love what we do. I share it because I think sometimes “home bakery” sounds a whole lot smaller and simpler than it actually is.
There are limits to how much two people can physically make. There are standards we won’t lower just to make more. Every loaf is mixed, folded, shaped, baked, cooled, bagged, labeled, carried upstairs, loaded into a truck and eventually handed to you by one of us.
And between all of that, we’re still Mom and Dad. We’re homeschooling, doing school pickup, making dinner, getting kids where they need to go and building a life together. It’s hard to do what you love while trying to do everything else you love.
But that’s also what makes this little bakery so special to us.
So when you grab a loaf from our table this weekend, just know there’s a whole lot more behind it than flour, water, salt and starter. ❤️
