Doughbody Left Behind - A short Origin Story

Doughbody Left Behind was created with the mission of bringing an inclusive eating experience for those with dietary restrictions. Whether it be celiac, a food allergy, or commitment to a plant based diet, we wanted everyone to be able to enjoy the foods they once loved, but had to give up. That's why all of our goods are Big 9 Allergen Free, Corn Free, and Plant Based. Using only clean label ingredients you can easily pronounce, we bake all of our breads, tortillas, and sweets in a celiac-safe, dedicated gluten free kitchen with all gluten free ingredients.

Founder Focus - Nathaniel Fuentes

Hi Friends. My name is Nathaniel Fuentes. I'm one of the Co-Founders of Doughbody Left Behind. My journey to discovering my food intolerances is very similar to Stephanie's. I started keto to lose weight (accepting my health problems as "normal"). Almost overnight, my acne, joint pain, allergies, and rhinitis disappeared. I attributed this to the "magic" of keto. It turns out, it was really the "magic" of removing dietary intolerances and processed junk food. As the years passed, I identified Gluten, Corn, and Caffeine as my personal no-no's.

Imagine for a moment, that you're Hispanic, Asian, or both in my case and you can't eat wheat or corn. It's practically in every dish... I tapped into my love for cooking and insatiable urge to research and started trying my hand at creating gluten and corn free alternatives to the foods I loved, but had to give up. Stephanie and I turned that passion project into Doughbody Left Behind. We wanted to share our hard work and passion for food with others who have similar dietary restrictions.

Founder Focus - Stephanie Reyes

Hi my name is Stephanie. I’m a Co-Founder of Doughbody Left Behind. I have to say that my gluten-free journey began as a mere attempt to lose weight. I kept changing diets looking for the best nutritional way to solve my health problems. I was going through cycles of anxiety, depression, weight gain and medical problems. At 5’2 I had reached my max weight gain of 210lbs. I was constantly debilitated by my health and horrible migraines. Defeated, I decided to try the latest diet fad, KETO. I was losing weight, my depression and anxiety had subsided, my thyroid was now balanced and my migraines almost nonexistent. Unknowingly I had given up my high consumption of gluten products... Eventually I determined gluten and caffeine were causing most of my health concerns. By living a gluten and caffeine free lifestyle I was able to enjoy cooking, eating, life and keep off 60lbs!

I was very fortunate to find Nathaniel, outside of sharing our love for food, we have similar nutritional goals and lifestyles. We are so proud to share our health journeys with you and how that has led us to create delicious gluten-free, vegan and big 9 allergen free goods that we thought we’d have to give up!
