It's barely 10am and I've already gone through more than a dozen eggs-and none of them were scrambled! A smash cake, 4 dozen cupcakes and 3 batches of brownies all done before the heat and humidity hit. A very productive Friday, so far!

Fall is always a crazy busy time for me...school is back in swing meaning both my husband and I are back to work and the oldest is back in school. Couple the usual craziness with added the craziness of being a "football widow" and what you have is very little time for baking. But this past weekend I was back in full force for this Mickey Mouse Clubhouse cake for a very special little boy's 2nd birthday. This tye-dyed vanilla cake has three layers in each tier and was filled with strawberry filling, then covered in almond fondant. In the end, this cake weighed more than my 3 yr old! It was a blast to make and I had alot of fun putting together the scene on the bottom tier. And I didnt even need to call for Toodles to bring me a Mouska-tool!

School's started so baking has taken a backseat to teaching but I got to make these cookies for the second year in a row for a friend supporting an Autism Awareness fundraiser. They sold out in minutes last year and hope they are just as successful this year!
