WHO WE ARE + WHERE WE ARE

If you’ve driven by and seen the Salt & Honey sign, you may be wondering, “When are you opening?” Trust me, I’m asking that question too.
Salt & Honey Coastal Cottage is being created as more than just a bakery. My hope is to create a warm, welcoming place where handmade baked goods, beautiful cakes and breads, coffee, conversation, and genuine connection come together.
A little coastal cottage where you can slow down for a minute, sit around the table, meet a friend, bring your family, or simply enjoy something made with love.

Right now, we are still very much in the process. Opening a bakery involves far more than putting up a sign, buying an oven, and starting to bake. There are plans, permits, inspections, requirements, revisions, and approvals, and I have been working my way through each one with the City of Corpus Christi.
It has been a slow and sometimes painstaking process. Every time another hoop appears, I jump through it. Every hurdle, I climb over it. And then I keep going. Because Salt & Honey is worth it. So while I don’t have an opening date to give you just yet, please know that things ARE happening behind those windows. As soon as we have cleared every last hurdle and I can finally tell you “WE’RE OPENING!”, you’ll hear it here first. Until then, I’ll keep sharing the journey with you, including the messy middle, because that is part of our story too.

Thank you for already cheering on this little bakery before the first loaf is baked inside its walls. We’re getting there.

Where She Started 🍯

Before the sign.
Before the storefront.
Before anyone knew her name.

Salt & Honey started as an idea.
A little dream of creating something warm and welcoming. A place that feels less like walking into a business and more like walking into someone’s home, where something good is always coming out of the oven and there’s room at the table for you.

I didn’t have every detail figured out. Truthfully, I still don’t. I’m learning as I go.

What started as an idea has slowly become an LLC, a lease, an empty storefront, plans scribbled and changed a hundred times, recipes being tested in my kitchen, conversations with the city, a sign suddenly hanging over the door, and people in our Island community already asking, “When are you opening?”

There have been moments when I’ve wanted everything to move faster. I even had meaningful dates in my heart when I hoped those doors might open.

But I’m learning something while building her:

She’s not being built on my time.
She’s not being built on Corpus Christi time.
She’s not even being built on Island time.

She’s being built on God’s time.

And apparently, He’s teaching me a little patience along the way. 🤍

So while we’re waiting for the day I finally get to turn that sign to OPEN, I thought I’d share the journey of where Salt & Honey started, how she’s growing, and everything it takes to turn a little dream into a little coastal cottage bakery.

This is where she started.

Hi, Island neighbors!

I’m Shelly, the owner and baker behind Salt & Honey Coastal Cottage Bakery, coming soon to North Padre Island.

Some of you may have already spotted our sign at 13941 S Padre Island Dr, and I have to say, seeing how excited everyone has been has been a little overwhelming in the very best way.

Salt & Honey isn’t meant to be a traditional bakery or a replacement for anything the Island has had before. I’m creating something that feels a little more like home.

Think small-batch breads, cookies and cakes, savory bites, gluten-free creations, coffee, and recipes that may change with the seasons, my inspiration, and sometimes simply what sounds wonderful coming out of the oven that morning.

But the dream is bigger than baked goods.

I want Salt & Honey to be a warm little place where neighbors meet, someone can sit down with a cup of coffee, conversations happen around the table, and you always feel welcome walking through the door.

I’ll be sharing the journey here as I turn an empty storefront into our little coastal cottage, experiment with recipes, build the menu, and get ready to open the doors.

Well… I guess the secret is officially out. 🍯

Seeing the Salt & Honey sign hanging there was one of those moments when an idea suddenly became very, very real.

Salt & Honey Coastal Cottage Bakery is coming to the Island.

This won’t be a traditional bakery with rows and rows of the same things every day. My dream is something smaller, warmer and a little more like home. Small-batch breads, cookies, cakes, savory bites, gluten-free creations, coffee and whatever happens to be coming out of the oven that day.

Most of all, I want Salt & Honey to be a place where you can come in, sit for a while, share a table and feel welcome.

There’s still a lot of work between this sign and opening those doors, and I’d love to bring you along while I build it.
