As promised here's my first recipe drop for you to enjoy! Over the past few months I've learned that many of my followers and friends have been eager to help me get back on my feet to keep Tad's Tasty Treats going. Did you know that in addition to what you see offered in products and classes I also teach approximately 22 special friends cooking lessons at a greatly reduced price? Probably not. and I kind of liked it that way. I feel like it's my give back to the community I love! I love watching these groups of happy faces come to my house to learn and succeed at making their own meals and treats. This month the Pathway's groups will be making their own Pizza's and having a meal together! The price I charge might cover the cost of ingredients, but doesn't pay me. Sound business move? Definitely not, but if I don't teach them, who will? I don't believe I can say I want to help people with challenges if I don't jump in on the front lines. These people (as you would expect) are mostly low income and I never want to deny any of them lessons based on ability to pay. Sooooo, here I am, helping my loyal customers who have dietary challenges by posting free recipes for you to create at home. What's in it for me? The hope that you might drop a financial gift my way to keep Tad's Tasty Treats doing the work of training the special needs community. We too are low income (choosing to work with Tad for 30+ years has come at a high cost in having to leave my career) but I've never let that drive my desire to bless others.

Low Sodium/Low Sugar Cinnamon Rolls

Ingredients:
4 ½ to 5 cups bread flour
¼ cup sugar
1/2 tsp salt
2 packets of Rapid Rise Yeast
¼ cup vegetable oil
2 cups warm water (108 to 115 degrees)
Filling:
¼ cup packed light brown sugar
2-3 tbsp cinnamon
Half a stick of butter (about 4 tbsp) softened
Put all dry ingredients in bowl and stir slightly with dough hook (on mixer) or wooden spoon if making by hand. Add oil and water and mix until the dough comes to a ball away from the bowl of the mixer. If making by hand you will only be able to stir so long before you need to turn the dough out onto a well-floured surface to knead in the rest of the flour.
Once dough is elastic (when you poke it with your finger, it springs back) put dough in a well oiled or sprayed (with non-stick spray) bowl. Cover with a towel or plastic wrap and put in a warm place to rise until doubled in size.
Push down dough and turn onto a sprayed surface. with a rolling pin, roll out into roughly 15x8 rectangle. With your hand spread butter evenly over dough up to the last 2 inches of the dough. Mix together the brown sugar and cinnamon in a separate bowl and sprinkle over the butter. Roll the dough and cut into 12 pinwheels. Place on a well sprayed baking pan with sides and leave room for them to rise. Cover with a towel and let double in size. Bake at 375 degrees for 15 minutes; turn the pan around and bake an additional 6-8 minutes til golden brown.
Once cooled you can package them and freeze to pull out as wanted. I like to pop them into a 350 degree oven for about 5 minutes to enjoy each serving hot. Enjoy!
