Cookie Butter Sourdough might just be my new favorite loaf.

Want to make one yourself? Every great loaf starts with a healthy , and we've made it easy to get started. Our active organic starter is available now at TheDailyKnead.com and is perfect for beginners and experienced bakers alike.

This bread starts with a long, slow fermentation that develops incredible flavor, then gets filled with creamy cookie butter before being shaped, proofed, and baked to golden perfection. The result is a crispy artisan crust with a soft, slightly sweet center that tastes amazing toasted with a little butter.

Ingredients:
β€’ 500g Bread Flour
β€’ 100g Sourdough Starter
β€’ 350g Water
β€’ 30g Raw Organic Honey
β€’ 15g Avocado Oil
β€’ 10g Salt
β€’ 1 cup Cookie Butter + 1/2 cup crumbled cookies or less to taste

Directions:
-Mix the sourdough starter, water, honey, and avocado oil until combined.
-Add the bread flour and sea salt and mix until a shaggy dough forms.
-Let rest for 30 minutes.
-Perform 4 sets of stretch and folds, 30 minutes apart.
-Bulk ferment until doubled and bubbly.
-After the first proof, gently turn the dough out and stretch it into a rectangle.
-Spread the cookie butter evenly across the dough.
-Shape into a boule, creating tension on the surface.
-Place in a banneton and refrigerate overnight for the second proof.
-Score and bake in a preheated Dutch oven at 425Β°F for 25 minutes covered and 375Β°F 10-20 minutes uncovered. Until the internal temperature reaches 205Β°F.
-Cool completely before slicing.

The Secret Number Every Baker Watches

Did you know bread has a temperature goal just like steak?

One of the best ways to know if a loaf is fully baked is by checking its internal temperature.

While every recipe is a little different, most breads are done when they reach:

πŸ₯– Sandwich Bread: 190–205Β°F
πŸ₯– Dinner Rolls & Milk Bread: 190–200Β°F
πŸ₯– Artisan Sourdough: 205–210Β°F

Why does this matter?

When bread reaches the proper internal temperature, the crumb has fully set, excess moisture has baked off, and the loaf is ready to finish cooling without becoming gummy or underbaked.

A loaf that looks beautiful on the outside can still be underdone in the center.

That's why many bakers rely on a thermometer rather than appearance alone.

A few signs your bread is fully baked:

βœ”οΈ Internal temperature is in the proper range
βœ”οΈ Deep golden-brown crust
βœ”οΈ Hollow sound when tapped on the bottom
βœ”οΈ Loaf feels light for its size
βœ”οΈAroma fills the kitchen

The hardest part?

Waiting for it to cool before slicing.

Fresh bread continues to finish setting as it cools, which helps create the perfect texture and crumb.

Good bread is part science, part art, and a little patience.
