Green Tea Creations & More was born out of the desire to create tasty, healthy, gluten-free desserts. What has evolved is so much more! It's still a work in progress, but why wait to start enjoying my gluten-free creations! Giving up gluten for medical reasons was a life changer. I spent a lot of time struggling with how to cook for my family without making myself sick or them feeling like I was p

unishing them for my illness. Not an easy task. But they stood by me like troopers! With every new variation of cookie, pancake, bread recipe, etc., they taste tested each and every one. Most importantly, they told me what they really thought; good, bad or indifferent. One of my greatest personal challenges to overcome with this new "way of life" was having certain staples readily available. Sometimes, after a long day at work, not having certain foods readily available was maddening. Those were my weakest moments where, out of frustration, I would throw caution to the wind and pay for it later. Unfortunately, that "later" came sooner and sooner each time. If you or someone you know has had to go through giving up gluten, you understand how challenging, frustrating, emotional and downright maddening it can be. Let's face it, peanut butter and chocolate chip morsels can only satisfy a sweet craving for so long. Sometimes you just want a cookie! Buying store bought gluten-free desserts and foods means getting a cartload of unnecessary ingredients. Do we need a lot of extra sugar, or added 'natural flavors'? When I want a cookie, I want ingredients I can pronounce and not have to look up. I only use high quality ingredients for my family and do the same for you. I buy organic and all gluten free ingredients. I cannot say my creations are GF Certified, but I only use gluten free products and do not keep regular flour ingredients in my home. I am currently making chocolate chip cookies, green tea chocolate cookies w/white or dark chocolate chips (white are my favorite!), green tea almond sugar cookies, turmeric coconut cake, naan, and more. Green tea cheese cake is just around the corner...

Just curious, several people have been visiting this page, but I have not posted in over a year....

My health journey has been constant and I'm considering resurrecting the page but am curious as to what health/food topics are of interest:

It's that special time of year!! It's Coquito Season! You can always tell a Puerto Rican household by the sudden appearance of coquito just in time for the holidays. The American tradition is to serve egg nog, but in Puerto Rico, this is the drink! If you enjoy coconut and rum, then you will fall in love with this drink :) I am now taking orders! This year for the holidays, show up with a bottle of coquito as a gift, or keep it for yourself! PM me to place your order. If you show up to someone's house with a bottle of coquito, they will remember it for years to come!

In case anyone is wondering, my recipes all include a gluten-free and diabetic-friendly flour. Therefore, I can make my recipes diabetic-friendly too simply by using safe sweetener alternatives. I like to use Stevia, as it is plant based. Feel free to pm me or ask me on this page about any favorite recipes you would like to try :)

I am really excited to say that with the Holidays drawing near, my holiday baking has begun! My first customer this season ordered gluten free & dairy free pumpkin pies and yummy pumpkin rolls so that her 11 yr. old granddaughter can enjoy the family desserts without having something made "separately" just for her. Now they can call enjoy the same desserts! Pumpkin pies are either $20 or $30 depending on size, and Pumpkin Rolls are $12 for a half roll, or $20 for a full roll. Spread the word!!
