Frozen dough instructions:
Note: if your dough is slightly defrosted when you receive it, you may re-freeze the dough until you are ready to use it.
Take frozen dough from freezer and place in fridge 24 hours before you plan to bake. On baking day, remove dough from fridge. Take dough out of the bag. You may need to lightly flour your hands f the dough is sticky. Shape dough as desired and place on a square piece of parchment to proof for 20-40 min on the counter. The dough should become a little bouncy, and rise slightly, but it will not double n size. If you poke the dough gently with a floured thumb and it springs back, it is ready to bake. To bake, preheat the oven (400 F). Place on a parchment-lined cookie sheet or preheated baking stone. Bake for 30 minutes or until golden brown.
To achieve a more crackly artisan crust use one of 2 baking methods:
1. Preheat a covered cast iron Dutch oven in 400F oven. When ready to bake, lift the dough using the parchment and place dough,, with the parchment, into the Dutch oven. Bake 15 min with lid on and 15 min with lid off. Remove from Dutch oven to cool.
2. Place a metal loaf or cake pan on the bottom of the oven or on lowest rack. Preheat cookie sheet or baking stone in a 400F oven middle rack. When dough is ready, transfer dough to cookie sheet or baking stone using the parchment. Just before closing the oven door, pour 1 cup of tap water into the pan you have placed in the bottom of the oven, and close the door quickly so steam does not escape. Bake for 30 min or until golden brown.
Making Rolls from Frosen Dough:
Cut dough into 6 equal portions and roll into balls, using a little bit of flour to reduce stickiness if necessary. Place on parchment lined cookie sheet. Top with nuts and seeds, herbs, cheese, or melted butter with garlic if desired. Bake at 400F for approx 20-25 min or until golden.

Reheating loaves and rolls:
Wrap bread or rolls in foil and heat at 350F on a cookie sheet until warmed through. For crispier crust place unwrapped bread or rolls on cookie sheet in 350F oven until desired doneness. Be careful not to over bake as the interior will become dry.
