Day 3: Rehydrating Your Sourdough Starter
DISCARD: What is discard or discarding?
Discarding is when you remove some of the starter from your jar because it’s unnecessary to keep feeding a huge amount. To keep sourdough starter happy and healthy, it MUST be fed at least a 1:1:1 ratio (1 part starter, 1 part water, 1 part flour) or it will starve and not thrive.
Example: (You currently have 120g of starter in your jar from yesterday. You will have to feed this amount 120g of water and 120g of flour. This means after feeding, your jar will contain 360g of starter—enough for 6 loaves of bread! This will overflow and make a mess. Been there, done that. This is why we discard.
STEP ONE: Remove 2/3 of starter from your jar and save it in the refrigerator in another jar or closed container. You can use this discard for pancakes, cookies, brownies, scones, crackers, or waffles for an amazing sourdough flavor.
STEP TWO: Feed the remaining starter in your jar with 75g water and 75g flour. Keep an eye out for lively activity like bubbles and rising today! Let it sit for 24 hours.
Your starter is almost ready to bake a delicious loaf of sourdough. 🫙🩷🙂
