Super fluffy and moist orange cake

Ingredients
3 eggs
200 g of sugar (1 cup)
120 ml oil (1⁄2 cup)
200 ml natural orange juice (1 cup approx. )
Scratch of 1 Orange
240 g of flour (2 cups)
2 teaspoons of baking powder
1 pinch of salt

Step by step
First, in a bowl beat eggs with sugar until the mixture is foamy and clearer. This step is key to getting airy.
Add the oil in the form of a thread while you continue beating.

Add orange juice and zest, blend gently.
In another container, mix the flour with baking powder and a pinch of salt.

Slowly incorporate this into the previous prep with wrap-around movements (no over-skipping).
Flip the mixture into a buttered and flourished mold (20–22 cm).

Bake to preheated oven to 180°C for 35–40 minutes, or until it comes out dry when poking.

This Jamaican Sweet Potato Pudding with Coconut is rich, soft, moist, and full of warm Caribbean flavor! Made with grated sweet potatoes, fresh coconut milk, spices, and a buttery coconut topping .

🧡 INGREDIENTS:

For the Pudding:

2 pounds sweet potatoes, peeled and grated
1 cup all-purpose flour
1 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
2 cups coconut milk
1 teaspoon vanilla extract
1/4 cup melted butter
1/2 cup raisins (optional)

1 cup coconut milk
2 tablespoons brown sugar

1/2 teaspoon vanilla extract

Zebra Cake

Ingredients:
• 2 cups flour
• 1 cup sugar
• ½ cup oil (or butter)
• 3 eggs
• 1 cup milk
• 1 tsp vanilla
• 1 tbsp cocoa powder
• 1 tsp baking powder
• ½ tsp baking soda

Steps:
1. Mix eggs + sugar + oil + vanilla.
2. Add milk and dry ingredients → mix smooth.
3. Divide batter into 2 parts.
4. Add cocoa powder to one part (chocolate batter).

Create the Zebra Pattern:
• Pour 2 tbsp vanilla batter into center of pan
• Then 2 tbsp chocolate batter on top
• Repeat (center only!) until finished

Bake:
• Bake at 180°C for 35–40 mins

• ½ cup butter (melted)
• 2 eggs
• 1 cup blueberries
• 2 tsp baking powder
• 1 tsp vanilla

Instructions
1. Mix flour, sugar, baking powder, salt
2. In another bowl: whisk milk, eggs, butter, vanilla
3. Combine wet + dry (don’t overmix)
4. Fold in blueberries
5. Scoop into muffin cups
