We think our Chocolate Chip cookies are pretty darn good. Lots of others do too considering they're usually the first thing to sell out at Market. We make anywhere from 15-20 dozen a week and there's a lot that goes into making them that's for sure. While I can't share our recipe with you, I'm happy to share our process for making them.

We mix large bins of cookie dough and let them rest in the refrigerator for at least 24 hours. This gives the flour time to hydrate more completely, time for the sugars to dissolve and for moisture to redistribute evenly. It also creates flavors that are deeper and more complex.

Then we scoop the dough into balls and onto sheet pans and into the freezer they go. Once frozen, we bake them straight from the freezer. Cookies hold their shape better and spread much less when you bake from frozen. We bake them at 475º for 18 minutes before cooling on a rack. Crispy edges, soft centers and a big, rich complex cookie that makes you not want to share and keep for yourself. We don't mind if you do. Cookies are available on our website.

We'll have lots of Sourdough Loaves, Bagels, Cookies, Brookies, Giant Cinnamon rolls and Sourdough Banana bread all fresh from our oven! Come early to beat the heat and for best selection.
