I did NOT expect sourdough pita to puff up like this on the first try.
Fifteen little dough balls, rolled thin, straight onto a scorching hot iron plate — and every single one of them puffed into that perfect pocket without me doing a thing to help it along. That's the moment you know your dough is right. 🫓 A long cold ferment in the fridge overnight gave these such a deep, complex flavor compared to regular pita, and that pocket means they're built for stuffing, dipping, scooping, whatever you're in the mood for. Watching them balloon up in the oven never once got old — I kept opening the door just to check.
There is officially no version of hummus night that doesn't need these now.

This moist, fluffy lemon-blueberry cake is one of my FAVORITES on the site! 🍋🫐 Every time I bring it to an event, someone asks me for the recipe. 😂 She's a keeper! Have you tried it yet?
