It’s here all month! Classic Cuban Sammie with honey roasted ham, shredded pork, gruyere, old Brooklyn mustard’s preserved lemon, pickles, served on house made baguette.
The pork shoulder is cooked low and slow for a total of 18 hours. Literally until it fell off the bone. The cucumbers and red onions were cold pickled in house with white balsamic vinegar, sugar, salt and toasted peppercorns. Our chef prefers the cold pickling method because it leaves the vegetables crisp, fresh and still tasting like they should with a little acidic zang that hits the back of the palate with each bite just before the richness of the fat becomes overpowering.
