This picture was taken back in November 2022 one of our very first farmers markets. And while you don’t see me out there every weekend anymore… a lot has changed. But at the same time, a lot hasn’t.
Lately, something has come to my attention through conversations at the markets and messages from many of you. It’s honestly surprising, a little shocking… and at the same time, it means a lot to me . Many people still believe that Mi Pan is a fully built out bakery with a full team behind, some of you don’t even know that I work out of my garage 😂 But the reality is different. Mi Pan, right now, is just me my two hands and my wife Alejandra, who supports everything on the financial side and working the markets. I’m still the one making every bread and pastry you see every weekend.
I’ve had some help here and there usually seasonal, a few months at a time but for the most part, it’s been me behind it all.
I’m sharing this because recently we’ve been hearing more comments sometimes frustration about why we didn’t bring certain items, why something was there one week and not the next, or why we can’t offer more variety. And I get it, truly, But right now, I’m doing everything I can just to keep up with the volume we’re producing every weekend. The numbers would honestly surprise you. With the equipment and setup we currently have, expanding the menu isn’t always feasible
I wish I could bring everything, every week. But for now, I have to be smart and efficient
The vision is bigger and when we open our bakery, things will be different. There will be more variety, more consistency, and a whole new level of what Mi Pan can be. We’re building toward that
